Rainbow Jell-O

Rainbow themed parties are so popular right now and I'm not surprised, how could you not love all those bright colors?!



I'm going to share a recipe with you that can be done to match any color scheme, but is simply amazing when you include all the colors of the rainbow. It is a very easy to make recipe, but does take some time as you wait for each layer to set a little before adding the next. To make a faster treat you could use only the primary colors, it will still have the appearance of the others in between. You could also leave out the layers mixed with yogurt or milk and use just transparent layers. 


You Will Need:

3oz. boxes of Jell-O mix, one in each color. I used red, orange, yellow, green, blue and purple, but you can use any colors you’d like.

12 envelopes unflavored gelatin or two envelopes per color.

Water

1.5 - 3 cups honey or vanilla flavored yogurt, heavy cream or sweetened condensed milk.

Directions:


Put 1 cup cold water in a bowl and sprinkle 2 packages unflavored gelatin over the top. Set aside.

Heat 2-cups water and package of red Jell-o over medium-high heat until Jell-o is dissolved. 

Pour hot Jell-o mixture over cold gelatin mixture and stir until dissolved. Split into two bowls.

Pour one about 1 cup of the red Jell-o from one bowl into a lightly greased 9x13” pan and place in the refrigerator until set, but not firm. About 15-20 minutes.

Allow the other bowl of red Jell-o to cool slightly for 5-10 minutes. Then add ONE of the following and mix well:
1/2 cup honey or vanilla yogurt OR
1/4 sweetened condensed milk OR
1/4 cup heavy cream

When first layer is set, carefully pour about 1 cup of the other red mixture (with yogurt, cream or milk added) on top and return to the refrigerator for another 15-20 minutes while you start the next two layers.

You will have a little of each layer left over, pour into another container and refrigerate to set. Makes for great sampling later!

Repeat the above process for each color. When all colors are complete, allow to set for an additional 2 hours before cutting into squares.
