A simple, yet delicious dinner. Great for anytime of the year. I found this recipe on Martha Stewart Living, and love it. Fresh, quick and easy to make for your family.
Ingredients:
Course salt & pepper for taste
1/4 cup grated Parmesan
1/4 cup fresh chopped parsley ( I used a teaspoon Italian seasoning)
2 cloves garlic, minced
1 egg
1 pound ground turkey or beef (turkey for low-fat)
1 tablespoon olive oil
1 can crushed tomatoes (28 oz)
3/4 pound whole wheat spaghetti

In a medium bowl, mash up ground meat. Add Parmesan, herbs garlic, egg, 1 teaspoon salt and pepper. Roll meat into 16 balls.
In a dutch oven or large pot, warm oil. Cook meatballs turning occasionally, until browned. About 10 minutes. Add crushed tomatoes. Bring to a boil, simmer and cover for 10-12 minutes.
Cook pasta noodles according to package directions. Serve noodles with homemade meatballs & sauce. Top with grated Parmesan cheese!
