Stuffed Potato Appetizer Recipe

Green bean casserole, sweet potato pie, stuffing, cranberry sauce and of course, the turkey! Thanksgiving is quickly approaching and it's full of amazing food! Recipes that have been passed down and are enjoyed each year as family sits around the table together and reflects on all they are thankful for.



Today I want to share with you a recipe that my Mom makes for every family get together. We call and make sure they will be there before we agree to be there ourselves, seriously. They rarely make it from the pan onto a plate, we fight for our spot in front of the oven for first dibs when they come out and risk burnt mouths to have a taste before they are cooled enough to eat without injury. I made a family cookbook last year and described these as the "I'll push my own kid over to get the last potato, potatoes." And I totally would. These. Are. The Best. Make these and you will be a hero, but be warned, you will be asked to bring them to every event from now on!

You can make these the night before and bake right before serving.

Ingredients: (I think we quadruple this recipe by now, but it's a good starting place)

1 bag small red potatoes (these are smaller than regular red potatoes, around 2 inches in diameter)
1 cup parmesan cheese (the green bottle powdered fakes stuff. I know, I know, but trust me here.)
1 cup mayonnaise 

*The filling is simple and you just need equal parts so you can always make more. Start with 1 cup of each.

Optional toppings: Paprika and I'm sure some diced cooked bacon wouldn't hurt! I haven't tried it yet because I hate to mess with perfection, but it's bacon so.....

Directions:

1. Boil whole potatoes 15-20 minutes or until tender (do not peel or cut)
2. Once they are cool - Cut each potato in half and scoop out the middle (reserve for another use or feed it to the dog!)
3. Mix mayonnaise and parmesan together
4. Lay potatoes on a cookie sheet, cut side up
5. Fill each potato half with mayo/parm mixture (fill using this easy peasy method)
6. Top with a little paprika if you like
7. Bake at 350F for 15 minutes
